Lent Outside the Box - Part 1
Hello Everyone!
I hope your Lent is off to a fantastic start! Our first recipe in my Lenten series is a twist on a southwest favorite - Cheesy Tex-Mex Casserole. Before I was diagnosed with PAH, I would make my family a version of these delicious Mexican Zucchini Burrito Boats from “Making Thyme for Health.” Over the years, I have continued to adapt this recipe to fit not only the needs of my family, but also my needs as someone with a handicap. Now, I have changed it once again to fit the needs of my family but in a new way; meatless yet packed with protein. The key protein-heavy ingredients in this recipe are tofu and beans! For all you tofu haters out there, I fed this to my mother (she abhors tofu) and she love it! She didn't even know it was in there. Moral of the story; don’t knock it ‘till you try it.
