It's Lent....What Can I Make?

 Hi Everyone! 

Happy First Week of Lent! This week many christians around the world began to celebrate Lent which is a time of reflection and penance. I am a practicing Catholic and the Catholic Church teaches that we are to abstain from eating meat on Fridays during lent and fast on both Ash Wednesday and Good Friday. However, many Catholics do not know that we are also asked to abstain from eating meat EVERY Friday of the year and not just during Lent. Well…why? Just like every Sunday is a mini Easter and we celebrate the Resurrection of Jesus Christ, we celebrate every Friday as a mini Good Friday and offer up sacrifice and penance to God. This is just another way for us to remember the sacrifice Jesus made for us and to give thanks for God's infinite mercy and love.

Now, some of you may be thinking “Oh my gosh, I’m going to get sick of pizza, fish, grilled cheese, etc. very quickly if I have to eat it every Friday” and that is how I felt too; Those meals are great, but I need more options that keep me full and don't leave me feeling weak all day. So, I decided to create a Lenten series for you guys! Every week I’ll be posting protein-packed and filling recipes that explore other ingredients outside of the typical meatless box. I will say that some recipes may include fish because I do enjoy a good filet every so often. But, the main focus will be using easily accessible and meatless ingredients in ways that won't leave your palate screaming "Ugh, not again!"
