Salmon Patties
NOTE: The basic formula for salmon patties is salmon, a fat, a binder, a flour, and spices. As always, feel free to add more or less, change up the ingredients, and make it your own!
Ingredients
12 oz Canned Salmon
1/2 Cup Mayonnaise
2 Scallions
3/4 Cup Corn Meal
2 Tbs Nutritional Yeast (optional)
1 1/4 tsp Lemon Pepper
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/2 tsp Mustard Powder
1 1/4 tsp Trader Joe's Mushroom Seasoning (optional)
1/4 tsp Paprika
1 Egg
Salt
Pepper
Oil for Shallow Frying
Directions
1) Open the canned salmon and drain the liquid from the can. Add the salmon to a large bowl and shred with a fork.
2) Once the salmon is well shredded, chop your scallions into slices and add them into the bowl along with the rest of the ingredients. (I usually put the egg in after I taste test my mixture in case I need to adjust the seasoning).
3) Using a spatula, begin to mix the ingredients until everything is well combined. Your mixture should be pasty and not too thick.
4) Heat a large skillet over medium heat. Once the skillet is hot, add in a few tablespoons of neutral oil of your choice (I use avocado oil).
5) When the oil is hot (this can be tested by placing the end of the chopstick in the oil - if bubbles form around the wood, the oil is ready), begin to spoon out patty-sized portions of the salmon mixture and dollop it into the pan. Use a spatula to flatten if needed. (Do not overcrowd your pan or your patties will not crisp!).
6) Fry your patties on one side for a few minutes until browned, then flip. Once the patties are browned on both sides, remove them from the pan and place them on a paper-towel lined plate (the paper towel will absorb the excess oil and prevent your patties from becoming soggy). You can also place them on a wire rack with a plate underneath to catch any excess oil.
7) Add more patties to the pan and repeat steps 5 and 6 until all of the mixture has been used.
8) Serve your patties either a la carte, with rice and veggies, on a bun, in a salad, topped with Kewpie Mayo, etc. The options are unlimited!
