Lent Outside the Box - Part 2

Hello Everyone!

This next recipe in my Lenten Series is a verrry unconventional take on a popular favorite: Cheddar Broccoli Potato Chowder. The secret ingredient? TOFU! Through some experimentation, I was able to utilize the tofu in a more liquid form so as not to ruin the traditional mouth feel of the soup. By blending the tofu with some chicken broth and spices, I created a high-protein element that wouldn't distract from the overall flavor. Additional high-protein ingredients include greek yogurt (15g/serving), cheese (6g/oz), and even broccoli (5g/cup)! I hope you give this one a go even though it sounds utterly crazy! But where is the fun and adventure in cooking if there isn't a little crazy thrown in here and there?
