It's Soup Season...And Flu Season

Hello Everyone! 

It is November and we are in prime soup season! However, we are also in prime flu season.... with colder weather comes bone-chilling illnesses. Below are some of my go-to soups for when I am feeling under the weather and need to chase away the chills. 

Note: With all of my recipes, I measure from the heart and don't really use measuring cups or spoons, so measure with your heart. Cooking is meant to be nutritious but also fun! Be creative and see where the flavors take you.

Garlic Soup

This garlic soup is easy to make and will help knock out any cold or flu you may catch. Garlic is so healthy for us and has many immune-boosting properties such as being anti-viral, anti-fungal, and anti-bacterial. The main compound found in garlic is called allicin which can be activated to it's full germ-fighting potential when you rest your garlic for at least 10 minutes after peeling/mincing/bruising/slicing, etc.


Simple Chicken Noodle Soup

Chicken noodle soup is one of those soups you can't mess up but here is a simple recipe for you to follow if you still don't know where to start. I use chicken thighs rather than chicken breast because the thighs have more antioxidants and minerals than the breast and they also don't dry out as quickly when cooked. However, you can also make this soup with leftover chicken you have in your fridge. 


Easy Egg Drop Soup

I made egg drop soup the first time when I sick and needed some protein but couldn't stomach any type of meat. Easy to say this went down well and I found myself eating the whole pot throughout the day. This is one of the easiest and quickest soups that I have every made and it is without a doubt a warm hug in a bowl.


Italian Penicillin (Pastina)

Pastina is another simple dish that has many variations. The variation I posted includes sautéing onions, celery, carrots, and garlic in a pot, blending it together with some chicken broth and herbs, and then ladling that over some freshly made pastina (little start shaped pasta), orzo, or any other small pasta. It's an easy way to get in a dose of vegetables and extra antioxidants when under the weather. Feel free to add some cooked chicken at the end if you want some extra protein in there.
